Vegetable soup recipe

It's official.. winter is here and there is nothing better than snuggling on the sofa with a blanket and a bowl of delicious soup. My favourite soup at the moment is this recipe I found on Tanya Burr's blog. It's healthy but, oh my, It's yummy. 

Here is what you need..

2 onions 
Veggie stock cube (or chicken)
2 cloves of Garlic
1 sweet potato
1 carrot
2 leeks
Broccoli
Celery
150g Red Split Lentils
Salt and Pepper to season
Olive oil

First thing is to get a large pan on the hob and heat some olive oil. Chop up the onions and fry them on a low heat.



While they are frying chop up all the vegetables you have, add the lentils and put them in with the onion. Add some more olive oil.





Now put the stock into boiling water (I used two cubes). Pour it into the pot with all the veggies.  Season with salt and pepper. Go make a cuppa tea, read a magazine and leave to simmer until the vegetables are soft. Tanya recommends around 25 minutes. 



Once you think it's ready give it a quick mix. I just put it into my blender for a bit. And ta-da! The healthy but yummy soup is ready to eat. You will have lots of this left over so pop it in the freezer for another day! Thanks to Tanya Burr for this recipe, it's deeeeelicious.

Snippets of my home: The kitchen/Living room

One of my guilty pleasures is spending hours on Pinterest, scrolling through home decor and lusting over everything! So I thought I would share some pictures of things I have in my living room and kitchen. I don't really know what my style is when it comes to home decor.. I like shabby chic but I also like modern. I love neutral spaces and industrial type furniture, lots of grey tones and fairy lights! What about you?
